Why in the world did I just pay over $3.00 for a small bag of processed cauliflower? I love cauliflower fried rice for many different dishes and unless you plan ahead it is more convenient to buy it already made – however you can make multiple bags of cauliflower fried rice for about the cost of 1 bag at the store.

2 heads cauliflower

1 bag frozen peas

1 cup chopped carrots

1 bundle chopped green onion

In a food processor, finely chop the cauliflower until rice sized. It is important to not over process the cauliflower or it will become too small. I did this by processing small amounts at a time so that I could secure the proper size. Once all cauliflower is processed, add the additional vegetables.

At this point you can either cook the rice, or portion them out into smaller portions and freeze.
