Mini Zucchini Lasagnas

1 lb ground turkey

1 large zucchini

½ onion, chopped

1 jar spaghetti sauce

3 oz shredded cheese

1 tsp onion powder

1 tsp garlic powder

1 tsp salt

 

I typically make these ahead and freeze, however if this is your meal today go ahead and preheat the oven to 350 degrees.

In a frying pan begin to brown the ground turkey. Add onion powder, garlic powder, and salt. Stir. Add onions. Once turkey is brown, remove from heat and put aside.

While turkey is browning, thinly slice the zucchini.

Prep small oven safe dishes, spray with non-stick cooking spray.

Due to diet restrictions, I weigh my turkey before composing the entire dish.

Begin layering turkey, spaghetti sauce, and zucchini, repeat until dish is full. Finished the dish with shredded cheese. I then place mine in the freezer. This dish makes a great, last minute meal after a long day of work. If this is your meal tonight bake for 20 minutes. If you are baking a frozen dish, increase time to 40 minutes.
