Rainbow Fudge

3 cups white chocolate chips

1 can 14 oz sweetened condensed milk

Food coloring in those 6 staple colors

Flavor extract (optional): for the second batch I used Watkins Peanut Butter Flavoring.

Instructions

Line an 8×8 inch baking dish with tinfoil

In a small bowl combine 1/2 cup + 3 tablespoons of white chocolate chips and 1 Tbsp sweetened condensed milk. If flavoring the fudge add 1 tsp of extract.  Stir all of the ingredients before heating – this will help the chocolate melt more evenly.

Microwave for 30 seconds and stir until smooth.  Depending on the strength of your microwave you may need to add more sweetened condensed milk.  If you added flavoring, check flavor to see if you need additional extract.  Color to be either the red or purple layer.

Spread it as evenly as possible. Set the fudge in the refrigerator to cool while working on the next layer.

Repeat until all 6 layers are done.

Fudge once complete

Once the fudge has cooled, remove the tinfoil from the pan and cut the fudge into small squares. Store the fudge in an airtight container until party time.  I also make mine ahead and freeze until day before my event.
